Mark's Potato Rolls
I promised myself the other day, that I’ll try Mark Sinclair’s (TFL member mcs) Potato rolls. My kids desire soft enriched white breads; and as i watched in regret my wife’s grocery bags carrying bland/cottonty mass produced rolls, this was my chance to try out Mark’s wonderful rolls featured in his latest video.
I have followed the recipe religiously, as I wanted to be true to Mark’s authentic product. I did deviate, however, when it came to overnight refrigeration. The rolls were baked the very same day, and they were absolutely delicious! They’ll have to taste even better refrigerated.
The house was filled with buttery aromas when those rolls were baked. My wife and kids ate them warm. Silky Soft, and squishy, slightly chewy crust, and a heavenly buttery milky sweet flavor, the rolls were a hit with the family. They loved it, and ask for more!

My kids are used to German rye breads, my American stepdaughters, unlike their Dad (who spent some childhood years in Germany) were not. But fortunately, they liked first my white breads, then the darker ryes grew on them, too.
White or not, even home made fluffy breads are 100 times better than supermarket cotton balls. Nice rolls, I'll check them out.

my kids don't appreciate thick crusts and prefer their breads crustless. As they grow, they'll eventually love darker chewier ones.

there is no reason for your wife to be buying rolls at the store any longer except my wife still buys that Oroweat 100% whole wheat at the store even though ti doesn't look like any 100% whole wheat I have ever made nor is it as good. Still not everyone's wife can be so brand loyal as mine :-)
Glad the kids liked Mark's rolls rolls. Mark will be pleased to know his rolls are fine non retarded too.

Sorry, I didn't get a chance to photograph it before it was taken away by a friend....She said it was excellent so I have added it to my bread file and will make it again in the future. I will try to remember to take a photo but no promises....my memory being what it is....

Potato brings fantastic moisture-retention, so good in these rolls...and especially if you have butter in the formula too!

Great looking potato rolls. You know how I like to make versions similar to these myself. I have some new concoction ready to bake tomorrow. I ran out of potatoes but I hope mie turn out as good as your beauties. Lucky kids you have!

I now know why you like potato in your breads, they make for a very soft , moist crumb. Haven't tried Thang Zhong yet, though.

Mark's rolls are a hoot! I made focaccia from the dough as I ran out of time and it was loved by both adults & kids. You have done perfect justice to the rolls. Your kids must be a happy bunch! At 3 & 5 it isn't surprising they want a crustless bread - mine still do at 12 & 17! Though they have recently started appreciating whole grain flours sneaked in as long as I don't tell them before they eat :).

I can't make such breads as often as my kids would wish. I don't eat fluffy bread nowadays, but i have to make a compromise, as there is a high demand for such enriched breads in my family.
I'll try to sneek in some wholegrain flour too!

This bread really tempts me to make immediately but too bad i am in office. Will definitely give this a try as my kids love soft bread too. wonder if i can make this bread with fillings, eg. cheese filling, custard, tuna mayo, potato curry etc...for asian, we like to have buns that come with filling so that is convenient for us to eat. will definitely give this a try soon...
I don't know about fillings, sunhana, but this bread is very good on it own. filling it with the ingredients you mentioned should make it incredibely delicious!

I don't know how I missed this post, but I guess better late than never. Excellent job Khalid, the inside looks super soft and cottony. FYI, I also make the bread as 700g pan loaves and those are great for toast or soft sandwiches.
