Cinnamon Buns Hawaiian-Style
Since we got back from Hawaii a few weeks ago, we’ve been craving Hawaiian sweetbread. When we were there we bought a local bakery’s cinnamon sweetbread, pull-apart buns coated with cinnamon sugar--not gooey sticky buns, just barely sinful.
When there, I tried the Hawaiian sweetbread recipe in this post (http://www.thefreshloaf.com/node/21175/hawaiian-portugese-sweet-bread#comment-148186). It was very good, and totally true to the local sweetbread we’ve often enjoyed. Very much like the “poor man’s brioche” in Reinhart’s BBA.
Today, I decided to go for Hawaiian-style cinnamon buns. I used the same dough recipe. I divided the dough into pieces of about 85 grams each. I made seven of them into plain sweetbread buns without cinnamon sugar.
They are soft, tender, shreddable and delicious. They will make good teriyaki chicken sandwiches tomorrow.
The other 12 buns were brushed with water, rolled in cinnamon-sugar, and placed in a buttered baking pan, each with a dollop of butter-cinnamon-sugar glaze on top. They were baked at 375 F for about 25 minutes. The glaze was too dry to run down the sides of the buns, but it makes a nice crispy sugary crust on top.
They are delicious! And not as guilt-inducing as “real” cinnamon rolls.
Tasha, of course, snoozed through the whole thing.

They look lovely, Glenn. And that crunchy, sugary, cinnamony topping looks very inviting. Who are you trying to kid about them not being guilt-inducing? That topping alone accounts for a week's allowance of sugar. They look lovely and soft, too.
Is that a magnifying glass behind Tasha? Or some fancy cat grooming tool?
I am glad the world didn't end today, too. I still have so much more to bake.

your buns are lovely .. and thanks for using my recipe. I remember clippng it from the paper so many many years ago ..
every now and then I get homesick and drag it out and make myself a couple of loaves. occasionaly I incorporate macadamia nuts, and that one is absolutely decadent. try it sometime. the only bakery I know that makes it (or did) is Amay's in Honolulu.
We love that recipe.
Punalu'u Bake Shop on the Big Island makes a Cinnamon-Raisin-Macadamia Sweet Bread. I may try that combo next time.

If I wanted guilt, I would have made Txfarmer's awesome pull-apart sticky buns (http://www.thefreshloaf.com/node/21208/pull-apart-pecan-buns-amp-frangipane-persimmon-brioche-tarts-what-do-leftover-brioche-dou). These latest cinnamon rolls have less than half the butter, so I'm saying they're healthy!
As to the mysterious device on the window sill, it is a kitty curry comb.
Very effective at capturing a small portion of the ton of hair Tasha shares every day...when she deigns to allow it.

They look wonderful, Glenn! When I saw your cinnamon buns, My eyes almost popped out. :) It is really looking tasty as well as you said tasty . I like Hawaii.. It is very cozy to feel breeze all day.
Your cat Tasha makes me sleepy... It is a nice place to sleep there.. One of my neighbors has 4 cats, Your curl comb will be helpful for her to take care of her cats. Thank you for showing this comb. I will look for it .
