I love these rolls and the Apple crisp looks devine...everything does...
I wanted to make some of these rolls to have our Cod sandwiches 'one of our favorite sandwiches' on the other nite but have run out of my freezer supply...I have made my own dehydrated onions for the next batch...hope to get to them soon..

My family is Irish...though I was raised in the states! So I have a love for fish and chips...which is made with Cod and Battered...not breaded! The very best cod sandwich which I just love...is served at our local Red Robin...this cod sandwich is so good...it has a thick fresh hot battered piece of delicious cod served on a large bun with thinnly shredded cabbage and some type of a tartar sauce...it's devine...So I started making them at home...on Norm's Onion rolls...my husband love's them and raves about the buns. The thinnly shredded cabbage really tops it off nicely...you can skip the deep fried and just use oven baked cod...but with a really good batter and properly deep fried.....the best! You can always double up the malt vinegar on the fries to wash it all down...: ) I have very, very good cholestrol levels...just inherited it I guess....but my husband has somewhat high also inherited...even though he's a very serious competitive cyclist ..has good weight ect...so he has to stay away from the danish today..."lol"...
The fish tacos in California are so popular...they are made the same way...but just served on a corn tortilla...a bun is much better!

I knew there had to be a cultural connection.
I've never been able to make a fish sandwhich (or taco) that I really like, although I love fish tacos, "Mahi Mahi burgers" in Hawaii, and fish and chips. It's probably the condiments - veggies and sauce that have to be just right.
Now, lox and cream cheese on an onion roll. Well, that's probably tomorrow's breakfast.

As always, you keep getting better and better. Everything looks delicious... that apple crunch looks something that I could do some serious damage to in a short sitting...and I've got a bag of apples in the fridge.
Nice scoring on the sourdough loaves...and a good looking ear on the long-score.
