Easy Sourdough - Part 1

Decided to do another easy sourdough post - did one a while back on my own site, but after some discussion here where I posted a recipe which the person who started that thread had a bit of a disaster with, decided to give it a go with photos as I went.

So... Sourdough - I do not think there is any magic to it. I see and read many articles on how you need to look after the starter, nurture it like a child or pet, feed it, and so on. Continuing on, I see techniques for "building the starter" - extra feeds and discards at fixed time and temperature intervals, then continuing on, kneading, wetting, stretching, folding with again, more regimented intervals before shaping, proofing, scoring to a set of rules and baking it using a dutch oven, cloche, baking stone, etc. before leaving it 6 hours to cool and fully set before daring to take a knife to your item of beauty that you've sweated blood and tears over...

Here's my take; It's just bread. Get over it and just do it.

Sure - you can apply rules, you can take far more care with it that I appear to do, you can regiment the process and create rules - if what you're after is something extra special. The one loaf a week you make and you want to take pride in it and make sure its the best there is. And that's fine. I'm making basic daily sourdough bread here and for that, there is nothing special. No tricky processes, no strict timings or (within reason) temperatures.

OK - The starter. This will take you a week or so to get going from scratch and make sure it's working for you. My starters are well established and they live in the fridge. I have separate wheat and spelt (made with white flour, kept at 100% hydration) and rye (made with whatever rye I have to hand and kept at 150% hydration). I take them out of the fridge, use some directly from the jar, or use some from the jar into a bowl when I add more flour & water to make a "production" starter. Some days I need 3Kg of starter, so I have no choice...

Last night I needed 150g, so I used some directly from the jar. The jar was then topped up (75g flour, 75g water) and left in the bakehouse while I prepared the dough then put in the fridge.

This is the recipe for my Buckfastleigh Sourdough. It's a daily bread which I bake five days a week and make and sell about 25 of them a week in local shops.

  • 100g stoneground wholemeal flour (organic; Marriages)
  • 400g strong white flour (organic; Shipton Mill No. 4)
  • 150g starter at 100% hydration
  • 285g water
  • 8g salt

It's Sunday evening about 9pm.

I used the starter from the jar out of the fridge. If I didn't have enough, then I'd have started with 30g starter from the fridge, added 60g flour and 60g water and left it for a few hours.

This is the dry stuff in the mixing bowl. I just separated them so you could see - wholemeal on the right, white on the left and salt in the middle. (500g flour + 8g salt) Mix these up and measure out the starter:

Maybe not exactly 285g but close enough. The water was directly out of the tap - my water here is chlorinated but that's fine. It was a little chilled so I added some hot to it (from the tap) I didn't check the temperature, but it felt slightly warm. (Oh look, the starter isn't floating, oh well)

Mix that up and tip it onto the bench and push it about a little more to make sure it's properly mixed and use a scraper to pull it into one shaggy blob:

This is then left, covered with the bowl for 30 minutes. Note: No kneading has happened yet.

Lets not forget the starter, so stick the jar on the scales, zero the scales and add 75g flour:

This was then stirred up and I left it in the relative warmth of the bakehouse for the next hour just to let it warm up a little to let the yeasty beasties get to know their new food source and start to get to work before I put it back in the fridge. (Incidentally, I'm making this on Sunday evening and the last time the starter was used was on Friday afternoon when I used some to create the 3Kg I needed for the Friday night knead)

Half an hour later, I take the bowl off the shaggy lump, use the scraper to tease it out to a longer "log" then knead it for about 30 seconds. Yes, 30 seconds - it's a push away with my thumbs, then roll back with fingers operation. It takes 3 or 4 of these to turn the vertical sausage into a horizontal one. I pick this up, turn it 90° and do it again. I do it 3 times in total then chaff it into a boulle shape then plonk it back into the bowl. This really did only take 30 seconds.

I stuck the thermometer into it so you could see.

That's taken less than 45 minutes with a big half hour gap in the middle. Low impact, very easy to do. I then covered it with a shower cap and left it in a (relatively) cool place in the downstairs kitchen - which was at about 18°C.

I split this into two blog entries just to keep the size and loading time down - on to part 2!

Buckwheat Cherry Levain

Inspired by one of the many killer loaves I had eaten at High Street on Market in Philadelphia, I decided to try and recreate their buckwheat cherry bread. They haven't shared their recipe, so I played around with a basic sourdough cherry bread recipe and subbed in 20% buckwheat flour. 

This version ended up with a moist crumb, a chewy crust, and a great flavor balance from the nutty buckwheat and the tart cherries. Just as good as High Street's, if you ask me. It's delicious toasted for breakfast or just devoured on its own. 

To start off I fed my starter at night to create the leaven. The next morning I mixed the final dough, mixing the leaven, water, and flour together and letting it autolyse for 30 minutes. After the autolyse period I mixed in the cherries and salt using the finger pinch technique (thank you Chad Robertson) and tossed it in the oven at 85 degrees for its bulk fermentation. Following the Tartine method, I turned the dough once every 30 minutes for the first two hours of bulk fermentation (4 turns) and then left it to sit undisturbed for one more hour. 

The dough looked ready, so I pre-shaped my boule and let it set for a 20 minute bench rest. One more shaping and off into the fridge it went for 18 hours. 

I baked it the next morning in my Lodge enamel/cast iron dutch oven. 20 minutes covered at 450 degrees and then 14 minutes uncovered with the oven on convection bake at 440 degrees. 

Leaven

1 spoonful starter

30g buckwheat flour (Bob's Red Mill)

30g bread flour (King Arthur)

60g filtered water

 

Final Dough

120 g leaven

270g bread flour

30g buckwheat flour

210g water @ 85 degrees F

8g salt

150g dried tart cherries

 

-Mix dough with leaven, adding in cherries and salt after 30 minute autolyse. 

-4 hours bulk fermentation at 85 degrees with 4 turns during the first 2 hours. 

-Pre-shape followed by a 20 minute bench rest, followed by the real shaping. 

-Proof in the fridge for 18 hours. 

-Bake covered at 450 for 20 minutes

-Bake uncovered on convection at 440 for 14 minutes

ChocolateStout&FreshCherries&Hazelnut Levain

I went camping over my weekend (tuesday and wednesday) and wanted to bring along a hearty sweet loaf that would be tasty and filling when eaten alone. I think I hit the nail on the head with this one, though we ended up eating it with peanut butter and honey. Also going (relatively) deep into the big woods of the pacific north west calls for a bread that is an embodiment of that very landscape. Heres how I made it.

  • 35g WW, 7%
  • 122g AP, 22%
  • 321g BF, 59%
  • 120g Ripe Levain (12% water 12% four)
  • 369g Rouge Chocolate Stout, 69%
  • 135g Fresh Cherries, 25%
  • 81g Hazelnuts (lightly roasted and lightly ground) 15%
  • 11g Salt 2%

I gave this rascal an hour long autolyse including the levain, then added the cherries, nuts and salt and mixed well with a wooden spoon, then proceeded with short sets of slap and folds interspersed with rests. I then bulk fermented for an additional two and a half of so hours, pre shaped very firmly, shaped and rolled it in oatbran and proofed for two and a half or so hours. then I baked it at 450 for 40 minutes of so, turned the oven down to 425 and continued baking for twenty minutes, then I shook the loaf out of the pan and baked it for another five or so minutes just to even up the browning.

A note, though the recordable final hydration of this loaf is a pretty manageable 81% the fresh cherries impart an incrediable amount of moisture so if you give this recipe a go (which I highly suggest) proceed with caution or maybe cut back on the hydration a little.

Amendments:
I made two changes, one was to omit the added compressed yeast and the other was substituting some of the walnuts with candied orange peel.

One of my finest panettoni. Incredibly soft and light which makes hard work when slicing. A fantastic bready texture that tears beautifully when pulled apart.

This is a very difficult formula to achieve success. The enriching ingredients in ratio to the flour are higher than any other panettone. This is due to there being no flour added in the second dough.

Pugliese Capriccioso

Last week's successful experiment making an “Italian” bread with bulk retardation has made me want to try other types of bread using that technique and other Italian-style breads.

I've been thinking about making a Pugliese bread ever since I first read about it in Peter Reinhart's The Bread Baker's Apprentice. Have you noticed that some thoughts take longer than others to get translated into action? Well, this one has taken about 4 years. In the interim, I have accumulated a sizable number of other bread books, and several have formulas for Pugliese. Consulting these, I find amazing variation, particularly in the flours used. Some use part or even entirely Durum. Some use partly whole wheat. What they have in common is 1) Use of a biga, 2) Relatively high hydration. Most recipes specify shaping as a round loaf with no scoring. The lone exception is The Il Fornaio Baking Book which shapes and scores Pugliese like a French bâtard. None of the formulas in the books I consulted use a sourdough biga.

The formula I ended up using is my own notion of a good rustic bread baked as a large round loaf, with a nod to Puglia. I suppose I could call it “Pugliese Capriccioso.”

Note: For greater authenticity, one would use a firm starter. If you do, the water in the final dough should be increased and the flour decreased to keep the hydration the same in the formula.

Method

  1. Refresh your sourdough starter 8-12 hours before mixing the dough.

  2. In a large mixing bowl, disperse the active starter in the water.

  3. Add the flours and mix to a shaggy mass.

  4. Cover the bowl tightly and let it rest (autolyse) for 20-60 minutes. (Note: There is no harm in autolysing for longer, but do not decrease the time to less than 20 minutes. I often go out and run errands for an hour or more during the autolyse.)

  5. Add the salt to the dough and mix it in thoroughly.

  6. Transfer the dough to a lightly oiled, clean bowl and cover tightly.

  7. After 30 minutes, do a “stretch and fold in the bowl” for 15-20 strokes. Repeat 3 more times at 30 minute intervals.

  8. When the dough has expanded by 75% or so (about 30 minutes more), transfer it to a floured bench.

  9. Pre-shape into a ball and let the dough rest for 20 minutes to relax the gluten.

  10. Shape the dough as a boule and place it seam-side down in a floured banneton.

  11. Place the banneton in a food-safe plastic bag or cover with a damp towel. Proof the boule until the dough springs back slowly when you poke a finger into it.

  12. 45 minutes before baking, preheat the oven to 490ºF with a baking stone and steaming apparatus in place.

  13. Transfer the loaf to the baking stone, seam-side up, steam the oven and turn the temperature down to 460ºF.

  14. After 15 minutes, remove the steaming apparatus. Bake for another 30 minutes or until the loaf is done. The crust should be nicely colored. The internal temperature should be at least 205ºF.

  15. Leave the loaf on the baking stone with the oven turned off and the door ajar for another 10 minutes to dry the crust.

  16. Transfer the loaf to a cooling rack. Cool completely before slicing.

 

Pugliese Capriccioso crumb

The crust was crunchy, and the crumb was quite chewy. The flavor was remarkably sweet, especially given that there was no sweetener in the formula. The nutty flavor of the durum flour came through and was even more present than in the breads I've baked with a higher percentage of durum. There was little sourdough tang, although that might increase by tomorrow.

This is a bread I will be making again. I think it could stand an increase in hydration, maybe even up to 78% or so.

I also made a high-extraction miche today. This followed my formula and procedures for the San Joaquin Sourdough. The only changes were 1) I used Central Milling's “Type 85 Unmalted” organic flour for the final dough, 2) I added 5 g of diastatic malt powder to the mix, 3) rather than pre-shaping and resting for 60 minutes, after cold retardation, I let the dough ferment at room temperature until almost doubled, then pre-shaped and rested for 20 minutes, and 4) I made one large boule with the entire dough.

 

The crust was quite crunchy with a sweet, caramelized sugar flavor. The flavor of the crumb was sweet and earthy with moderate sourness. It was quite delicious 3 hours out of the oven, and I think it will have a long shelf life and make wonderful toast.

This is another bread I expect to be making again.

 

I enjoyed a slice of each with our dinner of Proscuitto with melon and Fedelini with roasted San Marzano tomatoes, garlic, bread crumbs and fresh basel.

San Joaquin Sourdough, updated

 

The "San Joaquin Sourdough" is my own recipe. It evolved through multiple iterations from Anis Bouabsa's formula for baguettes. Most of my deviations developed in discussion on TFL with Janedo, who first suggested adding sourdough starter and rye, and, then, leaving out the baker's yeast and making it as a "pure" pain au levain.

I have tried many modifications of ingredients and procedures. The current formula uses the ingredients specified below.

Those who have followed the evolution of this bread will note that I have increased the levain from 20 to 30 (baker's) percent. I have also switched from a 75% hydration levain to a 100% hydration levain, reducing the water added to the dough to keep the overall dough hydration about the same.

Originally, all gluten development was by the “stretch and fold in the bowl” method. I have added a couple folds on the board and lengthened the bulk fermentation prior to cold retarding the dough.

These changes result in a somewhat tangier bread. I don't think they have changed the crust or crumb structure noticeably.

I made two other modifications of my procedures for today's bake: First, I employed the oven steaming method recommended for home bakers by The San Francisco Baking Institute.

The oven is not pre-steamed (before loading the loaves). A cast iron skillet filled with steel pieces (nuts and bolts, rebar pieces) is pre-heated in the oven along with two baking stones. One stone is placed on a rack above the stone and rack on which the loaves will be loaded. When the loaves are loaded, a perforated pie tin filled with ice cubes is set atop the skillet. As the ice melts, water drips through the perforations and turns to steam when it hits the metal pieces.

I deviated from the SFBI-prescribed method in two particulars: I used only a single baking stone, and my cast iron skillet was filled with lava rocks rather than steel pieces.

My second procedure modification was to open the oven door for a few seconds every 5 minutes during the final 15 minutes of the bake. This was to “vent” the steam rising from the loaves themselves in the hope this would result in a crust that stays crisp longer. It did result in less softening of the crust as the bread cooled. Methods to vent the oven and dry the crust during the last part of the bake warrant further exploration.

 

Ingredients

 

Active starter (100% hydration)

Procedures

Mixing In a large bowl, mix the active starter with the water to dissolve it. Add the flours and stir to form a shaggy mass. Cover tightly and let rest (autolyse) for 20-60 minutes.

Sprinkle the salt over the dough. Using a plastic scraper or silicon spatula, stretch and fold the dough 30 times, rotating the bowl 1/5 turn between each stroke. Cover tightly. Repeat this stretch and fold procedure 3 times more at 30 minute intervals.

Fermentation After the last series of stretches and folds, scape the dough into a lightly oiled 2 quart/2 liter container and cover tightly. (I use a 2 quart glass measuring pitcher with a tightly fitting plastic lid manufactured by Anchor Glass.) Ferment at room temperature for 90 minutes with a stretch and fold after 45 minutes, then place in the refrigerator and leave it there for 21 hours.

Dividing and Shaping  Take the dough out of the refrigerator and scrape it gently onto a lightly floured work surface. Gently pat it into a rectangle. Divide as desired or leave in one piece. To pre-shape for a bâtard, fold the near edge up just past the center of the dough and seal the edge by gently pressing the two layers together with the ulnar (little finger) edge of your hand or the heel of your hand, whichever works best for you. Then, bring the far edge of the dough gently just over the sealed edge and seal the new seam as described.

Cover the dough with plastic wrap and/or a kitchen towel and let it rest for about 60 minutes, with the seams facing up. (The time will depend on ambient temperature and how active your starter is. The dough should have risen slightly, but not much.)

To shape a bâtard, fold the near edge of the dough and seal the edge, as before. Now, take the far edge of the dough and bring it towards you all the way to the work surface and seal the seam with the heel of your hand. Rotate the loaf gently toward you 1/4 turn so the last seam you formed is against the work surface and roll the loaf back and forth, with minimal downward pressure, to further seal the seam. Then, with the palms of both hands resting softly on the loaf, roll it back and forth to shape a bâtard. Start with both hands in the middle of the loaf and move them outward as you roll the loaf, slightly increasing the pressure as you move outward, so the bâtard ends up with the middle highest and the ends pointed .

Preheating the oven One hour before baking, place a baking stone on the middle rack and put your steaming apparatus of choice in place. Heat the oven to 500F.

Proofing After shaping the loaf, transfer it to parchment paper liberally dusted with semolina or a linen couche. Cover the loaf with plastic wrap and a kitchen towel or a fold of the linen. Proof until the loaf has expanded to about 1-1/2 times it's original size. (30-45 minutes) Do not over-proof, if you want good oven-spring and bloom!

Baking Pre-steam the oven, if desired.

Slip a peel or cookie sheet under the parchment paper holding the loaf or transfer to a peel, if you used a couche. Score the loaf. (For a bâtard, hold the blade at about a 30 degree angle to the surface of the loaf. Make one swift end-to-end cut, about 1/2 inch deep.)

Transfer the loaf (and parchment paper, if used) to the baking stone. Steam the oven. Turn the oven down to 460F.

After 12-15 minutes, remove the loaf pan and your steaming apparatus from the oven. Rotate the loaf 180 degrees, if it is browning unevenly. Close the oven door.

Bake for another 12-15 minutes, then remove the loaf and place on a cooling rack. Check for doneness. (Nice crust color. Internal temperature of at least 205F. Hollow sound when you thump the bottom of the loaf.) If necessary, return to loaf to the oven to bake longer.

Cooling Cool on a rack for two hours before slicing.

San Joaquin Sourdough

The "San Joaquin Sourdough" is my own recipe. It evolved through multiple iterations from Anis Bouabsa's formula for baguettes. I got a pretty nice ear and grigne on this one.

 

 

Ingredients

 

Active starter (67% hydration)

100 gms

KAF European Artisan-style flour

450 gms

Giusto's whole rye flour

50 gms

Water

370 gms

Salt

10 gms

Note: Whole Wheat flour or White Whole Wheat flour may be substituted for the Whole Rye. Each results in a noticeable difference in flavor. All are good, but you may find you prefer one over the others.

 

Procedures

 

Mixing

In a large bowl, mix the active starter with the water to dissolve it. Add the flours and stir to form a shaggy mass. Cover tightly and let rest (autolyse) for 30 minutes.

Sprinkle the salt over the dough. Using the plastic scraper, stretch and fold the dough 30 times, rotating the bowl 1/5 turn between each stroke. Cover tightly. Repeat this stretch and fold procedure 3 times more at 30 minute intervals. 

 

Fermentation

After the last series of stretches and folds, scape the dough into a lightly oiled 2 quart/2 liter container and cover tightly. (I use a 2 quart glass measuring pitcher with a tightly fitting plastic lid manufactured by Anchor Glass.) Ferment at room temperature for an hour, then place in the refrigerator and leave it there for 21 hours. (In this time, my dough doubles in volume and is full of bubbles. YMMV.)

 

Dividing and Shaping

Take the dough out of the refrigerator and scrape it gently onto a lightly floured work surface. Gently pat it into a rectangle. Divide as desired or leave in one piece to make a 980 gm loaf. To pre-shape for a bâtard, fold the near edge up just past the center of the dough and seal the edge by gently pressing the two layers together with the ulnar (little finger) edge of your hand or the heel of your hand, whichever works best for you. Then, bring the far edge of the dough gently just over the sealed edge and seal the new seam as described.

Cover the dough with plastic wrap and/or a kitchen towel and let it rest for 30-60 minutes, with the seams facing up. (The time will depend on ambient temperature and how active your starter is. The dough should have risen slightly, but not much.)

Proofing

After shaping the loaf, transfer it to parchment paper liberally dusted with semolina or a linen couche, liberally dusted with flour. Cover the loaf with plastic wrap and a kitchen towel or a fold of the linen. Proof until the loaf has expanded to about 1-1/2 times it's original size. (30-45 minutes) Do not over-proof, if you want good oven-spring and bloom!

 

Baking

Put about a cup full of ice cubes in the loaf pan on the bottom shelf of the oven and close the door.

Slip a peel or cookie sheet under the parchment paper holding the loaf or transfer to a peel, if you used a couche. Score the loaf. (For a bâtard, hold the blade at about a 30 degree angle to the surface of the loaf. Make one swift end-to-end cut, about 1/2 inch deep.)

Transfer the loaf and parchment paper to the baking stone, pour one cup of boiling water into the skillet, and close the oven door. Turn the oven down to 460F.

After 12-15 minutes, remove the loaf pan and the skillet from the oven. Rotate the loaf 180 degrees, if it is browning unevenly. Close the oven door.

Bake for another 12-15 minutes, then remove the loaf and place on a cooling rack. Check for doneness. (Nice crust color. Internal temperature of at least 205F. Hollow sound when you thump the bottom of the loaf.) If necessary, return to loaf to the oven to bake longer.

When the loaf is done, leave it on the baking stone with the oven turned off and the door ajar for 5-10 minutes to dry and crisp up the crust.

 

Cooling

Cool on a rack for two hours before slicing.

Rye Flour

While wheat flour predominates in the breads of southern Europe and the UK, rye flour plays a more important role in the breads of northern and eastern Europe. This is due to rye's superior ability to grow in the poorer soils and cooler, wetter climates of those regions.

Chemical differences in the proteins and enzymes found in rye present differences in how rye flour behaves when mixed with water to make dough, and these differences impact the use of pre-ferments, mixing, fermentation and baking when there is more rye than wheat flour in the dough.

There are a number of different types of rye products available. They vary in how much of the rye berry is included, just as whole wheat differs from white wheat flour. They also differ in how finely ground the rye is.

There are breads made with 100% rye flour, but many other breads are made with lesser percentages. The influence of rye flour on dough handling and on the resulting taste and texture of the bread varies according to the proportion of rye used.

Chemical differences in rye

Gluten is the primary protein found in wheat, and the methods of mixing dough made with wheat flour center on their impact on gluten development and structure. Gluten forms the framework of cells that trap the carbon dioxide generated by fermentation of sugar by yeast. This trapping generates the expansion of the dough (rising) and ultimately the texture of the bread's crumb.

Rye contains much less gluten than wheat, and the gluten rye contains is of poor quality when it comes to trapping air bubbles. Consequently, breads made with mostly rye flour do not expand as much as those made with mostly wheat flour. The crumb of breads in which rye predominates tends to be dense with smaller holes. On the other hand, rye has more free sugars than wheat, so rye dough ferments faster.

Rye contains a group of important complex sugars called “pentosans.” These are present in other grains, but rye has more of this substance. Pentosans are important to the baker for several reasons. They compete with the proteins that make gluten for water, and water is the substance that leads the proteins to combine to form gluten. This means that rye doughs often require a higher proportion of water than doughs in which wheat predominates. Pentosans break apart easily during mixing, and their fragments result in a stickier dough. Because of this, rye doughs require gentler and, usually, briefer mixing than wheat doughs.

Rye is higher in the enzymes (amylases) that break down starch into sugars. Starch is needed to form the structure of the crumb, and if too much starch is split up, the texture of the bread suffers and becomes gummy. Traditionally, this is prevented by acidifying the rye dough, which slows down the action of amylases. This is why breads with a high percentage of rye flour are made with rye sour (rye-based sourdough starter), even if commercial yeast is added.

Acidification of rye dough has other nutritional advantages specific to rye bread which may also be of interest to the home baker, as well as the advantages that also apply to wheat-based sourdoughs.

Rye products used in baking bread

Whole rye berries may be used in bread, after soaking, to contribute flavor and texture. Rye berries are also used after breaking them into smaller pieces in the form of rye chops, cracked rye, rye flakes, and so forth.

The rye flours you may find include the following:

  • Pumpernickel flour – Whole grain, coarsely ground rye meal.
  • Dark rye flour - "flour milled from the periphery of the grain, similar to the clear flour produced during the miller (sic.) of the wheat. It tends to be coarse and sandy, to absorb quite a lot of water, and in general is difficult to work with." Hamelman, J.. Bread. pp. 48 ff.
  • Rye flour – Generally whole grain rye more finely ground than pumpernickel
  • Medium rye flour – Some but not all of the germ and bran have been removed from the whole grain.
  • Light or White rye flour – Equivalent to all purpose or patent wheat flour. The bran and germ have been mostly, if not entirely, milled out of the rye berry.

In Europe, especially Northern Europe, a much wider range of rye flours is available, encompassing different grinds as well as a variety of percentages of bran and germ.

Rye flour that contains the oily germ (pumpernickel, dark and medium) spoils very quickly, so try to buy the freshest possible and store it in the freezer.

A small amount of rye – 5-10% of the total flour by weight – has a definite effect on the flavor of the bread. The distinctive flavor of the rye itself may not be noticed, yet the bread's overall flavor seems better. This may be due to the action of the amylases in rye releasing more sugars. This small addition of rye is what defines a French pain de campagne. These breads are often sourdoughs, but the rye may be added with the rest of the flour rather than as a rye sour. There is so little rye in the dough, that it's behavior during mixing and fermentation and its texture when baked may be indistinguishable from a purely wheat bread.

Breads containing up to 40% rye flour are usually called “rye bread.” Jewish Sour Rye (New York Rye, Deli Rye) is a familiar example. The rye flour is in a large enough proportion so that it is advisable to add all or most of it as a rye sour. There is enough rye so that a distinct rye flavor is tasted. However, there is enough wheat flour to provide gluten to form the kind of crumb we associate with wheat breads.

The dough in these breads will feel different during mixing, tending to be stickier. The temptation is to add more flour, but this should be resisted. When hand kneading sticky rye doughs, using rapid, light strokes - minimizing the time your hands are in contact with the dough - decreases the amount of dough that will stick to your hands. You may also find that wetting your hands with water or lightly oiling them helps.

Breads with over 50% rye flour are another story. All the special considerations due to the chemical differences in rye become more important as the proportion of rye increases. Typically, these breads have a short bulk rise and, once baked, should be allowed to rest for several hours before slicing, so the crumb can set up properly. In the case of breads with 70% rye or more, a rest of 24 hours, even up to a couple of days, may be required.

They look like they'd be a ton of work, don't they? I thought they would be, but they really aren't that hard. From first flipping open the cookbook (the 1997 edition of the Joy of Cooking) to the moment I was getting blissed out eating them was under two hours. Not bad at all, and fresh out of the oven these were the best éclairs I've ever had.

There are three parts to éclairs: the pastry (pâte à choux), the filling (crème pâtissière), and the topping (chocolate ganache). If you are strapped for time you could cut corners on one or more of the parts by doing things like using frozen puffed pastry for the pastry, pudding or whipped cream for the filling, or some other frosting for the topping. Take a look at the recipes before doing so though: none of the pieces are that hard. There are a few places where you have to bring things to a boil carefully to prevent scalding, but I've found that if you warm the ingredients in the microwave before combining them in your sauce pan you can easily cut 10 or 15 minutes of stirring out of the process.

Choux Paste (pâte à choux)

1 cup all-purpose flour

1/2 cup water

1/2 cup milk

1 stick (8 tablespoons) unsalted butter

1/2 teaspoon salt

4 eggs

Combine the water, milk, butter, and salt in a small saucepan. Bring it to a boil. Stir in the flour and, while mixing, cook another minute or 2 to eliminate excess moisture. Transfer to a bowl and let cool for 5 minutes, stirring occasionally.

Beat in one egg at at time. When they have all been beaten in and the paste is smooth and shiny, set aside to cool. The paste may be use immediately or covered and refrigerated for later use.

Pastry Cream (Crème Pâtissière)

1/3 cups sugar

2 tablespoons all-purpose flour

2 tablespoons corn starch

4 egg yolks

1 1/3 cups milk

3/4 teaspoon vanilla

Combine the sugar, flour, corn starch, and egg yolks in a bowl. Beat with an electric mixer for 2 minutes until the mixture is thick and pale yellow.

In a small saucepan, bring the milk to a boil. Gradually pour the milk into the egg mixture, stirring it in as you do so. When fully combined, pour all of it into the saucepan and bring to a boil, whisking constantly. Boil for 1 to 2 minutes then remove mixture from heat. Stir in the vanilla and set aside to cool.

Cover the top with wax paper or parchment to prevent a skin from forming. This cream may be refrigerated for a day or two before use or used immediately.

Chocolate Ganache

3/4 cup heavy cream

8 ounces semisweet or bittersweet chocolate

Heat the cream. Stir in the chocolate and continue heating and stirring until all of the chocolate is melted.

Éclairs: Assembly

Preheat the oven to 400 degrees.

Form small logs out of the Choux paste on a baking sheet. If you have a pastry bag with large tips, you can squeeze them out neatly. I do not, so I just formed the logs with a spoon and my fingers.

These were about an inch across and 3 to 4 inches long.

Bake the pastries for 15 minutes at 400 degrees. Reduce the oven to 350 degrees and bake for another 10 to 30 minutes, depending on the size of the eclairs you are making.

When they are golden brown, turn the oven off. Poke a hole in the small end of the eclair and place them back in the oven for another 10 minutes to dry out. Remove the eclairs from the oven and let them cool a few minutes.

For the topping, dip or dribble the eclairs in the chocolate ganache.

To fill the eclairs, you can either use a pastry bag and squirt the pastry cream in through the drying hole as I did. Or you can slice the eclairs lengthwise and scoop the filling inside and place the top half back on top.

There you have it: chocolate, creamy bliss.

The eclairs keep OK for a few days in the refrigerator in an air tight container, but they are not nearly as good as when they are first assembled. Take my advice: make all of the elements in the same session, bake them up and make a fresh pot of coffee, and enjoy them immediately. You won't be sorry!

7 things about fresh-milled flour

In my experience, Fresh-Milled flour has 7 "things" I need to allow for:

This is based on using a sourdough starter/levain. Commercial yeast (dry or fresh) will be slightly different.

1. Fresh-milled flour is usually thirstier, takes more water, than store-bought WW. This is a general rule. You will eventually find exceptions, i.e., some grain will already be high in moisture, and therefore need less water.

2. Fresh-milled flour takes more time to soften, so use 30-90 minutes of soak/autolyse (without starter/levain, depending on granularity (particle size).

Sidenote: because of 1 and 2, if I make a combo fresh-milled WW and white flour loaf, I autolyse only the fresh-milled WW because the white flour would "steal" the water first.  So in that  case, I add the white flour (and some water) when I combine in the levain.  I'm sure there are other ways to do it.

3. Fresh-milled flour is Tricky, in that you think you over-wetted it, but then it absorbs and it feels underhydrated, but then it eventually slackens. So after you learn by trial and error (keep meticulous records of weights) and "dial it in", then you have to trust it to end up at the right spot of hydration.  You sort of have to learn three or four  different "feels", one at each stage, (depending if you add salt in a separate stage -- salt tightens dough, temporarily.)

3a. "Wet sand" feel. Home-milled flour can sometimes be gritty, especially extra hard wheat such as durum and Kamut/Khorasan.  I need at least a 1 hour autolyse (no starter/levain) for these.  And even then, the transformation from "wet sand" to dough doesn't happen, for me at least, until 30-60 minutes after incorporating the levain.

My procedure is usually: 1 hour autolyse, gently incorporate levain (no kneading, just gentle folds), let it rest 30 min, incorporate salt and hold-back water, let rest 30 minutes for it to slacken becasue salt tightens it up, then do stretch and folds.

3b. Important: Do not knead or do "stretch and folds" until the  "wet sand" becomes "dough" and the dough is extensible enough.  If the dough never slackens/loosens or becomes extensible ("stretch-able") enough say, 45 minutes, after adding salt (or after adding levain, if salt was already in it), then it likely needs more water.

4. Fresh-milled ferments FAST!  I use 3.5% prefermented flour for an overnight bulk ferment, or an overnight proof.  Fresh-milled, like most store-bought WW, maybe even more than store-bought WW,  keeps on fermenting in the fridge, more so than white flour does in the fridge.  The fridge won't "stop" WW from fermenting/aging/breaking down.

5. Fresh-milled flour has oil from the bran and germ  Store-bought WW has had some oil evaporated off, and might not even have had the germ in it, depends on brand. So I use little to no oil compared to store-bought WW.

6. If I over-hydrate a dough, and feel like I need to add flour to adjust, I add _white flour_ because it will absorb water quicker than fresh milled WW.  The late addition of WW and especially fresh-milled WW won't get as hydrated/soaked as well as what was in there from the beginning.  In other words, to "salvage" an over-wet dough at some point in the bulk ferment, I use white store-bought  flour.

7. Good oven spring on a boule or batard (ie, not a pan-loaf, like sandwich bread) generally requires under-fermenting. Do not let it rise (first or second rise) as much as you do with a loaf baked in a pan.  First rise (usually called bulk ferment) can be 30-50% increase.  2nd rise (usually called final proof) even less, depends on if you do it at room temp or in fridge.

3. Sifting is worth the effort. Even if you are going to bake with all the brown bits because it oxygenates the flour and allows it to absorb the water better. Separating them with a #40 will collect about 5>7% and a #50 will get around 15%. The bran can be presoaked, used in a levin, toasted or used for other things. My chickens love a bran dough ball.

4. My personal preference with whole wheat is to error on the side of over hydrate because the bran will absorb moisture even after it has baked. The Approachable Loaf from the recent Community Bake here at TFL (http://www.thefreshloaf.com/node/62486/community-bake-approachable-loaf-bread-lab) is 85 to 90% water and produces a Wonder Bread soft sandwich loaf. Say no to the brick.
